Ingredients

40ml Italian Espresso

15ml Cascara Tea (Cherry Tea - recipe below)

Sugar Syrup (to taste)

3 Cherries (normally made with dried cherries but fresh are fine)

1 Lemon Peel

1 Orange Peel
Method

To make the Cherry Tea, Steep the cherries, lemon peel and orange peel in 100ml of water in a saucepan for 10 minutes on a low simmer, then allow to cool.

To build the mocktail: Add 15ml of the tea to 40ml of a fine Italian espresso, and sugar syrup to taste, to a cocktail shaker.

Shake vigorously.

Fine strain into a chilled glass and add a slice of orange as garnish. Add ice if you wish.
